Minus the heat, yesterday was an absolutely fantastic day at CVW&S. So much so, that after the final customer departed (box of goodies in hand) and the doors were locked, we found ourselves reminiscing about the ole days. “REMEMBER WHEN…we would play cribbage on Saturday afternoons for a couple hours at a time?!? Not anymore.”
Even though Carpe Vino has been open since 2002, CVW&S has only been open since Feb of 2019 and in that short time, we have built something pretty special! A bottle shop that we are incredibly proud of and so happy to share with our customers/connoisseurs partaking in the purchasing and consumption of fine wine & spirits! As the year has passed, not only has our selection grown, but our palates as well. Most notably, we are testing/tasting a lot of cocktails which incorporate spirits/liqueurs/bitters that we are currently selling in the shop. The idea (as you may have seen in previous emails) is to create “HOME BARTENDING KITS” (click here to see all kits) that ALLOW YOU TO CRAFT a great COCKTAIL without going “full-mixology.” Just like food, cocktails can get insanely complimented with tons of prep work and the utilization of rare ingredients.
We want to create easy to prepare drinks that introduce you to ingredients/spirits you may not try by themselves, for example Mezcal. WE LOVE MEZCAL (okay we love all agave…CLICK HERE TO SEE ALL OUR AGAVE INVENTORY) and currently have over 50-60 different expressions within CVW&S. We know it can be a tough sell as most people instantly say, “IT’S TOO SMOKY.” Well, yes, Mezcal does have smokey nuances present and when COMBINED with other DELICIOUS LIQUEURS it can EASILY DIAL DOWN THE SMOKE AND BLOW YOUR MIND!
HOW DID WE FIND THE “NAKED AND FAMOUS?”
We spend a lot of time researching when it comes to the procurement of wines, spirits, and now cocktails. We use our library of books, magazine subscriptions and of course the “www,” but one of the greatest and simplest tools to use INSTAGRAM as a search engine. That’s where we found the NAKED AND FAMOUS, just scrolling one morning through a particular “#” feed we follow and boom…this post!

WFHCOCKTAILS posted this gem and it instantly caught our eye for several reasons:
1.) IT’S A BEAUTIFUL DRINK!
2.) We have all of these ingredients in stock and ready to sell!
3.) That book “Death & Co.” was written by one of the most iconic cocktail bars in the world (which we also have in our collection) DEATH & CO. located in NYC, LA and DENVER! NYC being the OG location.
4.) It’s pretty simple to make and as we found EXTREMELY TASTY.
To learn more about the history of this drink check out IMBIBE Magazine’s story posted on March, 3rd of 2020!

Wahaka Mezcal Espadín (Mexico)
Dry, blended (some mesquite) smoke. Baked mineral agave sweetness, green tea, green apple tart orchard fruits, thyme, orange oils, lemon, grapefruit, cracked peppercorn, mild jalapeno, reminiscent of a highlands tequila but with less complex sugars, watermelon, slight ginger, spearmint, touch of dried fig.
Agave hit then wafts of smoke, pepper adds complexity without heat while citrus notes add liveliness. Good minerality and control of proof whilst coming across as bigger than 40%. Finish bitters out almost like tannins and peppers over the lingering agave sweetness.

“Yellow, faintly tinged with green. The aroma is bright, mild and lime-lollipop sweet, although the flavor is more herbal, with hints of mint and anise, and a pronounced licorice finish and alcohol sting. Thick, syrupy and tongue-coating.”
Only two Chartreuse monks know the identity of the 130 plants, how to blend them and how to distill them into this world famous liqueur. They are also the only ones who know which plants they have to macerate to produce the natural green and yellow colours. And they alone supervise the slow ageing in oak casks.
This liqueur is gentle, floral and honeyed: think daisies under a hot sun. This has floral and violet aromas, with hints of sweet lemon and intense spices. On the palate are thick honey and blood orange flavors mixed with an array of exotic spices, including saffron, anise and cloves. There’s a bitter leaf and licorice finish, with a softening, sweet character.

Aperol Aperitivo
90 Points, Wine Enthusiast
“Among the canon of Italian spirits, Aperol and the Aperol Spritz cocktail are classics, available at a growing range of America’s best bars. The lurid red hue is recognizable from across the room. It’s light on every count—in terms of alcohol content, sweetness level and texture. The gentle sweet-bitter profile goes down easy—especially when lightened with bubbles.”
Aperol is the perfect aperitif. Bright orange in color, its unique bittersweet taste is derived from a secret recipe that has remained unchanged since its creation. Aperol was created in 1919 in Padova, Italy, by the Barbieri Brothers who launched the revolutionary idea of an aperitif with an alcohol content of only 11 percent. Their stylish and versatile creation inspired a cocktail which has become the signature drink of Italy: the Aperol Spritz.
